Fun Pancake Sunday!!

Today we made oatmeal pancakes .  I got the recipe from allrecipes.com { my favorite online spot for finding fun new recipes to try }.  I didn't have buttermilk though so I substituted regular milk instead.  And I decided to add a chopped up banana as well.  

 

As always I had to make a batch of regular pancakes for my kids, just to be safe.  I can't stand listening to them whine and complain first thing in the morning because I never make the kind they like.

I ate 4 of them and am so super stuffed now!  I thought they were very good and the oatmeal gave them a nice texture.  I definitely recommend the bananas.  Next time I might try adding raisins instead.

Oatmeal Pancakes

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 1 egg

Directions

  1. Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a food processor and puree until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
